Our Favorite Guacamole Recipe
Avocados have tremendous health benefits and they also taste great, especially when made into guacamole. To keep your guac from turning brown, drizzle it with citrus juice and press plastic wrap snugly into its surface (this limits the oxygen exposure that leads to browning). We like our guacamole chunky, so we mash the avocado only enough to break it up a bit, but you can make yours as smooth as you like.
2 large ripe avocados
Juice from 2 limes
4 tsp cannaoil
½ cup chopped green onions, white and green parts
Or red onion if you prefer
2 cloves garlic, minced
1 jalapeno pepper, seeded and finely diced
1/4 cup cilantro, chopped finely
1 tomato, seeded and chopped (optional)
1/4 teaspoon salt
And we like to add a clove of finely diced garlic as well, again optional
- In a medium bowl, mash the avocado
- Add all the other ingredients and mix thoroughly
1 ounce of good quality bud or 2 ounces of trim
6 cups olive oil or canola oil
- Place all ingredients in a pressure cooker or crockpot for 2 hours on low.
- Strain through cheese cloth into heat safe bowl, let cool.
